Bitter melon known as “ampalaya” is a vegetable highly recommended for persons with diabetes because of its natural bitter taste. One way of preparing and serving ampalaya is through the so-called bitter melon salad. We slice the ampalaya and soak it in water with salt for thirty minutes. Then squeeze the ampalaya and wash. Mix together sugar, vinegar, salt, pepper, and sesame oil. Pour this mixture and toss well. To serve, top it with tomatoes and onions.
