Pecan Tofu Meatballs Recipe


1 package firm or extra firm tofu(12-16 oz.)
½ cup pecan meal or finely chopped nuts
3 cups whole wheat bread crumbs
3 tbsps. Whole wheat or white flour
6 tbsps. Minced dried onions
4 tbsps. Dried parsley
¾ tsp. salt
1/8 tsp. sage
1/8 tsp. marjoram

Procedure :
In a mix bowl, wash tofu with potato masher. Combine all ingredients and mix or knead together with hands. Roll into balls. Place in baking sheet and bake at 325 deg. Fahrenheit for 30 minutes. Serve with spaghetti sauce or your favorite meatballs sauce.
