Crispy Chicken Proven

Proventiculus is the internal organ of the chicken that connects the gizzard and the crop. It is dredged in flour and deep-fried into golden perfection. It’s sold in the streets which are mostly near schools and the locals would usually call it “proben”. The locals would not mind which part of an animal that would be. All they knew is that it tastes good and it eases away the hunger. It’s usually dipped in a sauce before it’s eaten and it’s best when paired with “puso” (rice wrapped in coconut leaf).
